01Forty-day ribeye
Sixteen ounces, dry-aged in house, finished over the embers and rested as long as it cooked. Bone marrow butter, a wedge of charred lemon.
Wood-fire steak · the Pearl, San Antonio
Post oak, and nothing else, since the first night
Tue–Sun · 5pm to midnight · bar to 1am
Forty-two seats, twelve at the counter facing the fire. The menu and the prices are on this page, and a table for tonight usually exists after nine.
Everything on the menu meets the post oak at some point: the beef, the whole fish, the vegetables, the ice in the old fashioned. There is no gas line in the kitchen, and there is no second location.
Forty-two seats, twelve of them at the counter where you can watch the pass. The kitchen runs until midnight every night we are open, because the people who cook for a living eat late too.
Three plates, in the order the counter orders them
The room
A long room off Jones Avenue at the Pearl: the grill at one end, the bar at the other, and the counter in between. Low light, no music you have to talk over, and a kitchen that does not wind down at ten.
211 Jones Ave, San Antonio, TX 78215. Street parking on Jones and the Pearl garage on Grayson.
Reserve
We hold a third of the room for walk-ins every night, and the counter is walk-in only. For the rest, tell us when and how many, and we confirm by text.
Parties of seven or more, and anything you want cooked whole for the table, call (210) 555-0161 after three.
From the counter
★★★★★Sat at the counter on a Wednesday at eleven and watched them cook my ribeye over the coals. Left smelling like a campfire and would do it again tomorrow.
★★★★★The prices are on the website, which is how we ended up here: we knew what the fish for two cost before we booked. It was better than the number suggested.
★★★★★Old fashioned turned over an ember before the pour. Dark room, no music you have to shout over, kitchen still going after midnight. Our kind of place.
